One-Pan pork loin with brussels

INGREDIENTS

Mix together the mustard, oil, maple syrup, garlic, rosemary, thyme, salt and pepper in a bowl. Rub onto the pork loin on all sides. 

STEP 1:

Add the Brussels, apples, and onions to a baking sheet and toss in oil and sprinkle with salt and pepper.

STEP 2:

Move the Brussels and apples and place pork loin in center of baking sheet. Bake for 25-30 minutes or until internal temperature of pork reaches 140 degrees.

STEP 3:

When pork is done, remove from oven and tent loosely with foil and rest for 5 minutes.

STEP 4:

Slice pork and serve right away or let cool then place in meal prep containers.

STEP 5:
