one-pan pork loin

with Brussels and apples

+ pork loin + dijon or spicy mustard + olive oil + maple syrup + garlic cloves + fresh rosemary & thyme + salt & pepper + Brussels sprouts + apples + red onion

INGREDIENTS

Combine the mustard, oil, maple syrup, garlic, rosemary, thyme, salt and pepper. Rub onto the pork loin.

STEP 1:

Place pork loin in center of baking sheet. Add Brussels, apple slices, and onions around and drizzle with olive oil, salt and pepper.

STEP 2:

Bake uncoverd for 25-30 minutes, tossing vegetables halfway through cook time. Pork loin is done when internal temperature reaches 140 degrees.
