Mexican hot chocolate cookies

+ chocolate chips + unsalted butter + egg + vanilla + all-purpose flour or gluten-free flour + sugar + cocoa powder + baking powder + baking soda + fine salt + cinnamon + chili powder + cayenne pepper + chocolate chunks + mini marshmallows

INGREDIENTS

In a small saucepan over low heat, combine the chocolate chips and butter, stirring occasionally until melted and smooth. Add the sugar, egg, and vanilla. Stir.

STEP 1:

Add the flour, cocoa powder, baking powder, baking soda, salt, cinnamon, chili powder, and cayenne pepper. Stir together. Chill dough for 30 minutes in the fridge.

STEP 2:

Roll the chilled dough into 20 balls of equal size. Press dough ball into 1/2-inch thick disc. Top with mini marshmallow halves and chocolate chunks.

STEP 3:

Bake 7-9 minutes or until cookies are set and tops are crackly in appearance. Let cool on baking sheet before transferring to a cooling rack.

STEP 4:
