– 1 lb. flank steak  – 10 ounce grape tomatoes – ½ medium red onion – 1 head romaine lettuce, chopped – 1 large cucumber, chopped – ⅓ cup pitted kalamata olives, sliced – 1 cup garlic hummus  – ½ cup feta cheese – 2 tsp. oil  – Lemon wedges  For the Herbed-Yogurt Dressing: – 1 cup plain yogurt – 1 Tbsp. olive oil  – Juice of ½ lemon – 1 large clove garlic, finely minced – ½  tsp. dried oregano – ½ tsp dried dill – ½ tsp. salt – 2 tsp. chopped fresh mint 

LET'S COOK!

Make the herbed-yogurt dressing by combining all of the dressing ingredients.

Whisk the dressing ingredients and set aside. Prepare steak and tomato skewers. Grill on high. Tomatoes for 5-8 minutes and steak for 4-5 minutes per side. Slice steak against the grain.

Assemble the bowls. Spread hummus on the bottom of a bowl. Add romaine, steak, tomatoes, diced cucumber, olives, feta cheese and herbed-yogurt dressing.
