FREEZER BREAKFAST SANDWICHES
INCLUDES HOW-TO-MAKE & REHEAT
~ 18 large eggs ~ ⅓ cup milk of choice ~ 12 English muffins, toasted ~ 12 slices bacon, cooked as desired ~ 12 slices cheddar cheese ~ Salt & black pepper
Preheat oven to 350℉. Grease large baking sheet. In a bowl, whisk together eggs and milk. Season with salt and pepper. Pour eggs into the baking sheet and bake for 10-12 minutes.
While eggs bake, place English muffin halves face-up on another baking sheet. Top each with bacon and cheese. Cut the eggs into 12 portions. Top muffins with egg patties and the other half of muffin.
Allow sandwiches to cool for 20 minutes. Wrap each one with foil. Place sandwiches on the baking sheet and freeze until solid. Transfer to zip-top bags or freezer-safe container
To reheat: Place foil-wrapped frozen breakfast sandwich(es) in a preheated 350℉ oven or toaster oven for 30-35 minutes or until heated through.
