Lentil stew with beef

- beef stew meat - olive oil - onion - carrots  - celery - garlic  - canned diced tomatoes - beef broth - dry red lentils - dried apricots - lemon - fresh parsley

SPICES: - ground turmeric - paprika - ground cumin - ground coriander - garlic powder - ground cinnamon - ground ginger - fine salt - black pepper - bay leaves

INGREDIENTS

To a hot skillet, add oil and swirl to coat. Add the beef and cook until browned, about 2-3 minutes. Flip and cook for another 2 minutes.

STEP 1:

Add browned meat to slow cooker with onion, celery, garlic, diced tomatoes, broth, dry lentils, and spices.

STEP 2:

Add bay leaves and gently stir together. Place lid on slow cooker and cook on low for 7-9 hours.

STEP 3:

After cooking, add dried apricots, lemon juice, and parsley. Stir together.

STEP 4:

Ladle the stew into bowls. If desired, top servings with yogurt or sour cream, sprinkle with fresh parsley and add naan on the side.

STEP 5:

Each serving boasts 7 grams of fiber and 30 grams of protein thanks to the easy-to-cook slow-cooked lentils.
