In the Instant Pot, saute the oil, onion, and garlic until onions are translucent. Add the chicken, sweet potatoes, red pepper, broth, and seasonings. Seal the Instant Pot and set on high pressure for 10 minutes.
Once time is up, release the pressure and add the canned coconut milk and frozen green beans. Turn Instant Pot to sauté mode and cook for 2-3 minutes or until green beans are heated through. Add curry powder and salt to taste.
Serve over cauliflower rice, regular rice, or mixed greens. Top with cashews, lime wedges, or fresh cilantro.
