+ uncooked quinoa + water + lemon juice + avocado oil + honey + garlic powder + dried apricots + green onions + almonds + cilantro + mint leaves + arugula
In a saucepan over medium-high heat, add the quinoa, water, and a pinch of salt. Bring to a boil, then cover and reduce heat to a simmer for 15 minutes.
Remove from heat and let sit for 5 minutes. Then fluff with a fork. While quinoa cooks add lemon juice, oil, honey, and garlic powder to small bowl and whisk together.
Add the cooked quinoa, apricots, onions, almonds, cilantro, and mint to a bowl. Pour dressing over top and toss gently to combine.
Serve over a bed of arugula if desired. Sprinkled feta or goat cheese over top if you like.
Makes for a great side to salmon, chicken, or beef dishes.
