For the Pork: + pork tenderloin + chili powder + garlic powder + onion powder + dried oregano + fine salt + black pepper + cinnamon
For the Pineapple Salsa: + fresh pineapple + red bell pepper + red onion + jalapeño + fresh cilantro + lime juice + garlic clove + salt to taste
Prepare salsa by combining all ingredients in bowl, toss to combine, place in fridge until ready to serve.
Preheat grill to medium-high heat (425 degrees). Combine all spices and rub generously on pork tenderloin.
Rest for 15 minutes, then place tenderloin on grill grates over indirect heat for 22-25 minutes (or internal heat 145 degrees).
Remove from grill, place on plate, cover with foil allow to rest for 10 minutes to allow juices to redistribute throughout meat.
Serve with pineapple salsa on top and your choice of vegetables on the side. A healthy pork dinner recipe that is tender and juicy!
