For the Salad: - spinach or mixed greens - sliced cucumber - grape or cherry tomatoes - red onion - artichoke hearts - feta cheese - kalamata olives - avocado - quinoa, cooked

For the Dressing: - avocado oil - fresh oregano - juice of 1 lemon - salt & pepper

INGREDIENTS

In a bowl, combine all salad ingredients. Set aside.

STEP 1:

In a small bowl or jar, whisk (or shake) together the dressing ingredients.

STEP 2:

Pour over salad and toss gently to coat evenly. Chill in refrigerator until ready to serve.
