Full of vitamins and minerals, pumpkin is a great source of vitamin A (strengthens the immune system), antioxidants, iron, and folate, to name a few. It’s a nutrient-dense food that’s easy to incorporate into many dishes.

Make the Cinnamon Swirl. 

STEP  ONE

Make the crumb topping.

STEP TWO

Make the cake: whisk together the flour, baking soda, baking powder, pumpkin pie spice, and sea salt.

STEP THREE

Combine the pumpkin puree, eggs, sugar, vanilla, and milk.

STEP FOUR

Add the dry ingredients to the wet ingredients and stir together.

STEP FIVE

Pour half the coffee cake batter into the prepared cake pan.

STEP SIX

Next, spoon the cinnamon swirl onto the coffee cake batter.

STEP SEVEN

Pour the rest of the coffee cake batter over the cinnamon swirl and top with crumb topping.

STEP EIGHT

Bake for 40-55 minutes in a 350℉ oven.
