In a bowl, cream together butter, cane sugar, brown sugar. Add the egg and vanilla, stir until combined.
Add the flour, baking soda, baking powder, and salt. Stir. Fold in the sprinkles. Cover and chill dough for 30 minutes to 1 hour.
Preheat the oven to 350 degrees. Scoop out dough in 1 1/2 tablespoon-sized balls and place on baking sheet. Sprinkle with extra sprinkles, press in slightly.
Bake for 12-14 minutes or until light golden brown on bottom and edges. Let cool for 5 minutes before removing from baking sheet.
Serve slightly warm or let cool and place in an airtight container. Will keep for up to 5-7 days. Freeze for up to 3 months.
