VEGETARIAN TIKKA MASALA

- olive oil - yellow onion - red bell pepper - zucchini - garlic cloves - tomato sauce - chickpeas - frozen cauliflower  - siggi's plain whole milk yogurt - baby spinach SPICES: - garam masala, turmeric, garlic powder, onion powder, salt, ginger, coriander, chili powder, black pepper cayenne

INGREDIENTS

In a large skillet, add oil, onion, red pepper and zucchini. Cook for 5 minutes. Add garlic and cook 1 more minute.

STEP 1:

Reduce heat to medium, add tomato sauce and spices. Next add drained chickpeas and frozen cauliflower.

STEP 2:

Bring to a simmer, then reduce heat to low, cover and simmer on low to 10-15 minutes.

STEP 3:

Remove lid, allow mixture to stop simmering. Then add add yogurt and spinach to skillet. Stir together for 3-5 minutes or until spinach has wilted.

STEP 4:

Serve over steamed rice or cauliflower rice with chopped cilantro, lime wedges, toasted sesame seeds and/or chopped cashews.
