Easy Taco Soup Recipe

- ground beef - olive oil - garlic cloves - onion - bell pepper - zucchini - carrots - chili powder - ground cumin - dried oregano - tomato sauce - fire-roasted tomatoes - water or broth - black beans - frozen corn - lime juice - sour cream or Greek yogurt

INGREDIENTS

Select 'saute' on the Instant Pot and add oil. Add ground beef, garlic, onion, bell pepper, zucchini, and carrots. Saute for 5-7 minutes.

STEP 1:

Add the spices, tomato sauce, water or broth, diced tomatoes, black beans, and corn. Stir to combine.

STEP 2:

Lock lid in place, flip valve to sealing position. Cook on high pressure for 8 minutes. All 5-7 minutes of natural release before venting.

STEP 3:

Remove lid, stir in sour cream and lime juice, and season with salt & pepper to taste. Serve with toppings of choice.

STEP 4:
