EASY SKILLET LASAGNA

avocado oil lean ground beef zucchini yellow bell pepper yellow onion garlic cloves marinara sauce dried Italian seasoning water uncooked lasagna noodles cottage cheese shredded mozzarella cheese fresh basil leaves

INGREDIENTS

Place a 12-inch skillet with tight fitting lid over medium-high heat. When hot, add oil, ground beef, zucchini, bell pepper, onions, and garlic. Cook, stirring and breaking meta into small pieces for 8-10 minutes.

STEP 1:

Add marinara sauce, Italian seasoning and water to the skillet with the meat and veggie mixture. Bring to a boil. Add broken lasagna noodles and stir.

STEP 2:

Reduce heat to low and cook for 25-30 minutes. Remove the lid and stir in cottage cheese and 3/4 cup mozzarella cheese. Cook an additional 5 minutes uncovered.

STEP 3:

Sprinkle with remaining mozzarella cheese. Remove the skillet from heat and allow to stand, covered for 5 minutes to allow sauce to thicken. Broil for 3-4 minutes for crisp cheese on top if desired.

STEP 4:

Broil for 3-4 minutes for crisp cheese on top if desired. Garnish with fresh basil then serve.
