– 1 tsp. oil – 1 lb. lean ground beef – 1 zucchini, diced  – 1 yellow bell pepper, diced  – 1 onion, diced – 4 garlic cloves, minced – 1 (24 oz.) jar marinara sauce – 2 tsp. dried Italian seasoning – 1 ½ cups water – 8 oz. uncooked lasagna noodles, broken into small pieces – 1 cup cottage cheese or ricotta cheese – 4 oz. shredded mozzarella cheese – Fresh basil leaves for garnish

LET'S COOK!

Place a skillet over medium-high heat. Add ground beef and vegetables. Use a spoon to break up the meat. Cook, stirring occasionally, for 8-10 minutes.

Add marinara sauce, Italian seasoning, and water and bring to a boil. Add the broken lasagna noodles and stir. Reduce heat to low and place the lid on the skillet.

Cook for 20-25 minutes, stirring every 5 minutes, or until the noodles are tender. Stir in the cottage cheese and ½ cup mozzarella cheese. Cook for 5 minutes uncovered. Top with remaining cheese. Garnish with fresh basil.
