+mayonnaise + curry powder + lime juice + pinch of salt + cooked chicken + apple + celery rib + red onion + raisins + dry-roasted cashews + fresh cilantro

INGREDIENTS

Mix together mayo, curry, lime juice, and salt. Add chicken, apple, celery, & onion. Stir.

STEP 1:

Fold in raisins, cashews, and cilantro. Serve!

STEP 2:

Serve in lettuce wrap or  on a bed of greens.

Or serve between slices of your favorite bread (gluten-free if needed!)
