FOR THE POTATOES: + red potatoes + ghee + olive oil + garlic powder + onion powder + salt & pepper
GARLIC-HERB OIL: + olive oil + fresh parsley leaves + fresh rosemary + fresh thyme + garlic clove + salt
Preheat the oven to 450 degrees. Cook the potatoes until just soft. While they're cooking blend together the Garlic Herb Oil.
Place the hot potatoes on a cutting board and lightly pat them dry. Toss with ghee, garlic & onion powder. Press a glass with a flat bottom onto each potato to 'smash' them.
Bake for 28-30 minutes or until potatoes are lightly golden brown and have crispy edges. Sprinkle with coarse salt and pepper.
Drizzle the potatoes with garlic-herb oil just before serving or serve on the side for dipping.
Serve as an appetizer or a side dish to your dinner.
