CHICKEN AND DUMPLING SOUP

For the Soup: - avocado oil - yellow onion - chicken breasts - garlic powder - salt & pepper - ground sage - dried thyme and rosemary - chicken broth - frozen peas and carrots - heavy cream - cornstarch

INGREDIENTS

For the Egg-Free Dumplings: - all-purpose flour or gluten-free flour - garlic powder - baking powder - fine salt - chopped fresh chives - milk of choice

INGREDIENTS

Heat oil in soup pot over medium-high heat. Add onions and sauté for 2 minutes.

STEP 1:

Place chicken over onions. Sprinkle with seasonings then add broth. Cover and simmer for 20 minutes.

STEP 2:

While chicken cooks, prepare dumpling dough. Mix together all dumpling ingredients in bowl.

STEP 3:

Shred the cooked chicken and return to soup pot. Add the frozen vegetables and heavy cream. Add dumpling dough to soup 1/2 teaspoon at a time.

STEP 4:

Cook until dumplings float on top, about 10 minutes. Season with salt & pepper to taste.

STEP 5:
