chewy s'mores granola bars

GLUTEN-FREE | VEGAN

+ old fashioned rolled oats + gluten-free 1:1 flour + crispy rice cereal + flax meal + baking powder + fine salt + melted butter (vegan butter or coconut oil) + honey (brown rice syrup for vegan) + mashed banana + vanilla  + graham crackers of choice + mini marshmallows + mini chocolate chips

INGREDIENTS

Combine the oats, flour, cereal, flax meal, baking powder, and salt in a mixing bowl.

STEP 1:

Make a well in center of oat mixture. Add melted butter, honey, banana, and vanilla. Stir to combine.

STEP 2:

Lastly, fold in graham cracker pieces, marshmallows, and chocolate chips.  Press mixture firmly into an 8x8 baking pan.

STEP 3:

Bake on middle rack in oven for 18-20 minutes or until bars are puffed and set in the center.

STEP 4:

Remove from the oven and place on wire rack to cool completely (about 1 hour). Then slice into 9 equal bars.

STEP 5:

These s'mores granola bars are a sweet little treat with a taste that's reminiscent of nights under the stars around a campfire.
