CHEESY CHICKEN AND RICE CASSEROLE

For the Cheese Sauce: - unsalted butter - flour - milk of choice - chicken broth - garlic powder - fine salt - Dijon mustard - paprika - black pepper - shredded cheddar cheese

INGREDIENTS

For the Casserole - raw, boneless, skinless chicken breasts  - uncooked basmati, jasmine, or long-grain white rice - yellow onion - bag frozen California blend vegetables

INGREDIENTS

Place saucepan over medium-high heat. Add butter, once melted, sprinkle the flour over the butter and whisk for 1 minute.

STEP 1:

Reduce heat to low, add milk slowly, whisking slowly. Stir in garlic power, salt, mustard, paprika and pepper. Bring to boil for 1 minute.

STEP 2:

Add 2 cups shredded cheese to sauce, stir until smooth. Pour cheese sauce in bottle of casserole dish.

STEP 3:

Add the raw chicken pieces, uncooked rice, onion, and frozen vegetables. Stir and cover with aluminum foil and bake for 30 minutes.

STEP 4:

Remove from oven, stir, sprinkle with rest of cheese, bake uncovered another 10 minutes. Let stand for 10-15 minutes before serving.

STEP 5:
