BUFFALO CHICKEN CASSEROLE

Avocado oil Fresh cauliflower rice Carrots Red bell pepper Yellow onion Garlic powder Dried parsley Salt & pepper Buffalo sauce Mayo Eggs Chicken breast

INGREDIENTS

In a skillet over med-high heat, add oil, cauliflower rice, carrots, red pepper, onion, and spices. Sauté for 10-12 minutes.

STEP 1:

In a bowl, mix together buffalo sauce, mayo and eggs. To casserole dish add sautéed veggies, chicken and sauce.

STEP 2:

Mix together, spread out evenly in casserole dish. Bake uncovered for 20-25 minutes or until center is set.

STEP 3:

Remove from oven, drizzle with ranch, hot sauce or additional buffalo sauce. Serve hot.

STEP 4:

This veggie -loaded casserole is full of buffalo chicken flavor and so good right out of the oven.
