BREAFKAST CASSEROLE (with Sweet Potato)

- avocado oil - sweet potato - ground pork - garlic powder - Italian seasoning - fennel - ground sage - fine salt - black pepper - red onion - red bell pepper - spinach leaves - eggs

INGREDIENTS

Add all seasonings to a small bowl, mix together, set aside.

STEP 1:

In a pan, heat oil, add diced sweet potato. Cover and let cook for 10-12 minutes. In another pan, add ground pork and seasoning.

STEP 2:

Cook the ground pork until cooked through. Add the peppers and onion to sweet potato pan and sauté for  3-4 minutes.

STEP 3:

Add the spinach and cook 1-2 minutes. Add the cooked pork sausage and stir together.

STEP 4:

In a bowl, whisk together eggs, salt & pepper. To a 9x9 baking dish, add sweet potato/sausage mixture. Pour eggs over top. Bake for 20-24 minutes.

STEP 5:

This veggie-filled, satisfying breakfast casserole is great for meal prep because it reheats well!
