Ingredients: - old-fashioned rolled oats - quick-cooking oats - ground flax seeds - pumpkin pie spice - baking powder - salt - eggs - plain yogurt - maple syrup - vanilla - unsalted butter - dried apple rings - raisins - walnuts
In a large bowl mix together the oats, flax meal, spices, baking powder, and salt. In another bowl mix together the eggs, yogurt, maple syrup, vanilla, and butter.
Add the wet ingredients to the dry ingredients and stir together. Fold in the dried apples, walnuts, and raisins.
Scoop the cookie dough with a 1/4-cup measuring cup and drop onto parchment-covered baking sheet. Flatten to 1/2-inch thickness.
Bake at 350 degrees F for 15 minutes or until cooked through and edges are golden brown. Let cool completely before serving or storing.
