Greek Chicken Kebab

For the Marinade - olive oil - lemon juice - lemon zest  - apple cider vinegar - fresh oregano - garlic cloves - salt & pepper  - red pepper flakes

INGREDIENTS

For the Skewers - chicken breasts - zucchini - sweet bell pepper - red onion - wooden skewers

INGREDIENTS

Whisk together the marinade ingredients. Transfer 3/4 of marinade to container or zip-top bag.

STEP 1:

Add the cut chicken to marinade. Marinate for 4-24 hours. Cut veggies and prep the skewers.

STEP 2:

Assemble the kebabs by threading chicken and veggies onto skewers alternating between ingredients.

STEP 3:

Once grill is heated to 400°F, brush kebabs with remaining 1/4 of marinade. Grill until chicken is cooked through, about 5-7 minutes on each side.

STEP 4:

Serve the kebabs with tzatziki sauce and fresh squeezed lemon if desired.

STEP 5:
