LEMON BAKED OATMEAL with blueberries

- flaxseed meal + water - old-fashioned rolled oats - chia seeds - baking powder - fine salt - maple syrup - fresh lemon juice - lemon zest - unsweetened applesauce - non-dairy milk - avocado oil - blueberries - white chocolate chips

INGREDIENTS

In a small bowl, combine the flaxseed meal with water. Stir well and set aside at least 5 minutes to thicken.

STEP 1:

In a bowl, combine the oats, chia seeds, baking powder, and salt. Add the flax meal mixture, maple syrup, lemon juice, lemon zest, applesauce, milk and oil.

STEP 2:

Gently fold in the blueberries and, if using, the white chocolate chips.

STEP 3:

Pour the oat mixture into the prepared baking dish. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

STEP 4:

Remove from oven and cool on a wire rack. Serve warm or cold with desired toppings.
