BANANA OATMEAL PANCAKES

- old-fashioned rolled oats - large eggs - milk of choice - avocado oil - white vinegar - gluten-free flour blend - baking powder - baking soda - mashed banana

INGREDIENTS

In a blender or food processor, pulse the oats into a flour. It should be mostly ground with some larger pieces of old-fashioned oats still intact.

STEP 1:

In a bowl, whisk together the large eggs, milk, oil, and vinegar. Add the dry ingredients and mix. Fold in mashed banana.

STEP 2:

Place a small skillet over medium-high heat. Mist with cooking spray. Add batter (2-3 tablespoons) to center.

STEP 3:

Cook until lightly golden brown on the bottom and small bubbles form at the top of the batter, about 2 minutes.

STEP 4:

Flip each pancake and cook until golden brown on the other side, 1 to 1 ½ minutes more. Continue until all batter is used up.
