CHICKEN ALFREDO SPAGHETTI  SQUASH

- spaghetti squash - chicken thighs or breasts - raw cashews - boiling water - nutritional yeast - garlic cloves - lemon juice - fine salt - unsweetened almond milk - fresh basil

INGREDIENTS

Place cashews in bowl and cover with boiling water. Place plate over bowl to cover, allow to rest for 30 minutes.

STEP 1:

Place spaghetti squash halves, cut side down on one side of baking sheet. Place chicken breasts on other side, sprinkle with salt & pepper.

STEP 2:

Bake for 25-30 minutes. Remove chicken from sheet pan, continue baking squash for 20-25 minutes.

STEP 3:

Place drained cashews, nutritional yeast, garlic, lemon juice, salt and almond milk in blender. Blend on high for 2 minutes.

STEP 4:

Remove squash from oven, scrape flesh (pasta strands) into large skillet. Add sliced chicken and alfredo sauce. Heat for 5-6 minutes to heat through.

STEP 5:

Serve this easy, dairy free alfredo spaghetti squash dinner topped with fresh basil any night of the week. A great healthy dinner or meal prepped lunches.
