Easy Weeknight Meal

In a skillet, cook the ground turkey with Italian seasoning, garlic powder, fennel seeds, salt & pepper. Cook for 7-8 minutes or until cooked through.
To the baking dish add the quinoa, water, pizza sauce, cooked turkey, bell pepper, zucchini, onion and mushrooms.Stir together.
Add half the pepperoni and 3/4 cup mozzarella cheese. Stir to combine. Cover with foil and bake for 50 minutes.
Remove foil, sprinkled with remaining pepperoni and mozzarella cheese. Bake for 7-8 minutes or until cheese has melted.
Let stand for 10 minutes before sprinkling with chopped basil, then serve.
