PEPPERONI PIZZA QUINOA CASSEROLE

ground turkey dried Italian seasoning garlic powder fennel seeds, crushed salt & pepper quinoa + water pizza sauce green bell pepper zucchini onion mushrooms pepperoni mozzarella cheese fresh basil

INGREDIENTS

In a skillet, cook the ground turkey with Italian seasoning, garlic powder, fennel seeds, salt & pepper. Cook for 7-8 minutes or until cooked through.

STEP 1:

To the baking dish add the quinoa, water, pizza sauce, cooked turkey, bell pepper, zucchini, onion and mushrooms.Stir together.

STEP 2:

Add half the pepperoni and 3/4 cup mozzarella cheese. Stir to combine. Cover with foil and bake for 50 minutes.

STEP 3:

Remove foil, sprinkled with remaining pepperoni and mozzarella cheese. Bake for 7-8 minutes or until cheese has melted.

STEP 4:

Let stand for 10 minutes before sprinkling with chopped basil, then serve.
