beef stew meat avocado oil yellow onion potatoes parsnips carrots garlic cloves diced tomatoes beef broth dried thyme dried rosemary green beans salt & pepper cornstarch

INGREDIENTS

Heat oil in skillet, working in batches, brown the beef on all sides, about 2-3 minutes per batch. Transfer meat to slow cooker.

STEP 1:

To the slow cooker, add the onion, potatoes, parsnips, carrots, garlic, tomatoes, broth, thyme, and rosemary. Stir, place lid on slow cooker.

STEP 2:

Cook on LOW for 8 hours or on HIGH for 4 hours. Stir in green beans during the last 30-60 minutes of cooking time. 

STEP 3:

Season with salt and pepper and serve.

STEP 4:

For a thicker stew, remove one cup broth, place in saucepan over med-high heat. Whisk in cornstarch until liquid thickens. Slowly drizzle back into slow cooker. Stir, cover, and cook an additional 15-20 minutes.
