+ avocado oil + yellow onion + green bell pepper + garlic cloves + ground beef + diced tomatoes + tomato paste + pumpkin puree + chicken broth + dried oregano + chili powder + cinnamon + cumin + salt & pepper
Heat a skillet over medium-high heat. Add oil and saute the onions and peppers for 7 minutes. Add the garlic and cook 30 seconds more.
Add the ground beef and using a spatula, break into small pieces as it cooks. Cook until nearly cooked through, about 8-10 minutes.
Transfer meat mixture into slow cooker. Add remaining ingredients and stir together. Set heat to LOW for 6-7 hours or HIGH for 3-4 hours.
Serve with your favorite toppings. We enjoy diced avocado, fresh cilantro, sliced green onions, adn lime wedges.
Serve right away or let cool completely and keep in an airtight container in the fridge for up to 4 days.
