4-6 Fresh Artichokes
1 Lemon
3 Garlic Cloves
1 cup Water
Instant Pot
Kitchen Shears
Sharp Knife
Remove part of the stem, outer leaves, and trim the top.
Rub with lemon and prepare the Instant Pot for cooking.
Arrange the artichokes, cut side up, on the rack in a single layer.
Cook at high pressure for 10 minutes. Dip in butter!
Using a paring knife, scrape away the hairs of the choke. Trim any tough bits that remain on the underside of the heart. Dip and enjoy or add to your next salad, pasta, or soup.
