LET'S COOK! Place sweet potatoes and Brussels sprouts on a baking sheet. Drizzle with oil. Toss to coat. TIP: make sure vegetables are similar in size and coated with oil.

Season with salt & pepper and start roasting. Prepare the meatloaves - in a bowl combine the ground beef, BBQ sauce, seasonings and mix with clean hands.

Make the meatloaves. Divide the meat mixture into 4 portions and shape each into a football shape. Add to the pan and brush loaves with BBQ sauce. Place back in the oven.
